Having a great chef knife can make my cooking so much productive and joyful. It makes slicing food so much easier, so much prettier and quicker; I will never cut my budget for my best chefs knives because I can’t live without them. Plus, a best chefs knives doesn’t mean an expensive chef knife.

After using many kitchen knives, I prefer to use 8′-10′ chef knife, it’s well balance, solid feel, extremely sharp, edge well, easy to maintain and of course it doesn’t cost too much too.

What Do I think?

Personally, I love my Shun and Misono, if you have the budget, go get one yourself! This will be the money well worth spend. After holding those best chef knives, I cook more and I cook more often, it’s really a joy to cut, slice and do whatever with my Shun Classic and Minsono.

Wusthof Classic 8″ inch chef knife is the best chef knife voted in the consumer report, it’s great alright, but boy, after you try to use Shun and Misono, I don’t think you will ever want to hold an ordinary chef knife again:)

Global is among the top chef knife, but personally I think it’s one of the sharpest in forged knife category, but I think it have less edge retention compare to Shun and Misono.

Anyway, Forschner Chef Knife is the best budget chef knife that has the forged kitchen knives performance. It can easily out performance many branded forged knife out there. And it’s strongly recommended by consumer report, cook illustrated and me too:)

    These look like great knives, but I haven’t seen any for a lefty. I know it’s only 10% of the population, but I’m crossing my fingers that we haven’t been forgotten.

    The shun classic blade set can be special ordered for a lefty. They grind the asymmetrical bolster on the left side for ideal finger placement and balance for left handed people.


  3. Thanks for providing such an insightful article. I have never heard of Misono, so I will definitely do some research on them. I’ve been leaning towards Shun myself, but it always helps to hear what other have to say too.

    I have owned my 8″ Forschner Victorinox knife for about 2 years. It works as well today as the day it arrived. I have had to sharpen it maybe twice since I’ve owned it. I am not a professional chef by any means, but this knife is worlds above the cheap knife-set knives (I think Farberware) that I had previously been using. I use this knife every day, multiple times, and it makes chopping one of my favorite parts of preparing a meal. I have given 2 away as gifts, and am back to purchase another. You will never go back once you’ve used this knife.
