I have owned my 8" Forschner Victorinox knife for about 2 years. It works as well today as the day it arrived. I have had to sharpen it maybe twice since I've owned it. I am not a professional chef by any means, but this knife is worlds above the cheap knife-set knives (I think Farberware) that I had previously been using. I use this knife every day, multiple times, and it makes chopping one of my favorite parts of preparing a meal. I have given 2 away as gifts, and am back to purchase another. You will never go back once you've used this knife.

Thanks for providing such an insightful article. I have never heard of Misono, so I will definitely do some research on them. I've been leaning towards Shun myself, but it always helps to hear what other have to say too.

The shun classic blade set can be special ordered for a lefty. They grind the asymmetrical bolster on the left side for ideal finger placement and balance for left handed people.

These look like great knives, but I haven't seen any for a lefty. I know it's only 10% of the population, but I'm crossing my fingers that we haven't been forgotten.
