I've used just about every brand of knife out there. I still think that Wusthof is the very best. Yes, I tried knives from other countries, Japan for example. You cannot beat Wusthof. I've work in Las Vegas kitchens where we did dinners in the 1000s and banquets in the 1000s. Wusthof held up. I still have mostly Wusthof with a few Henckels.
